After ten years on Vesterbro, I have learned what it takes to create it here in Copenhagen. It is not complicated. Let me take you through it, hour by hour.

An Italian evening never begins with the main course. It begins with a glass that sets the tone.

An Aperol Spritz, a Negroni or a glass of something sparkling, while you settle in and look at the menu. Aperitivo is not about quenching your thirst. It is a small signal to the body that we are slowing down now. The rush of the day stays at the door.

This is where a good Italian restaurant in Copenhagen sets itself apart from one that just wants you out again. You should be allowed to land before the food even arrives.

Share Some Antipasti

Then comes the part I love most. Antipasti, the small plates you share at the table.

Some braised artichokes, a little stracciatella, maybe a vitello tonnato. You reach for the same things, you taste, you agree and disagree about what is best. This is how an Italian meal builds a sense of togetherness, long before the main course arrives. Nobody is in a hurry, and everyone is already part of it.

Then comes the pizza. And if it is made right, this is where the evening peaks.

We make authentic Italian pizza in the Roman style, thin and crispy, with a dough fermented for at least 48 hours. It is light enough that you can eat a whole one and still have energy for the rest of the evening. One each, that is how we do it in Italy, but do give each other a bite to taste.

A perfect Italian evening is unthinkable without the right glass.

My brother Danilo has hand-picked over 1,000 natural wines for our Italian wine bar in Copenhagen. He knows the winemaker behind every single bottle, so when he recommends something for your pizza, he is not reading off a label. He is talking about people he knows.

Here is what people often forget. The food and the wine can be perfect, but it is the atmosphere that decides whether the evening becomes something.

The real Italian evening has warmth in it. Soft light, the sound of a kitchen at work, tables close enough that it feels alive. We are on the corner of Istedgade, right in the best of Vesterbro, and in the warmer months you can sit on the terrace and watch the neighborhood go by. Finish Slowly

The perfect evening does not end with a bill slapped on the table.

It ends with a dolce. A homemade tiramisu, an espresso, maybe a limoncello at the end. This is often where the best conversations happen, when the food is gone, the glasses are half empty, and nobody is in a hurry to move on. Let that part stretch out. That is the whole point.
